Salted Caramel Peanut Butter Rice Krispy Treats

When I make dessert, I like to give it to friends and family.

You might be thinking, Oh, that’s so sweet of her!

But truthfully, it’s for my own good. If I didn’t give it away, I would likely eat all of it myself. And I only have one other roommate, so I’m not exactly baking for an army at any given time. 😉

One of my favorite desserts and/or snacks is a Rice Krispy treat. When I was in elementary school, the brand actually made snack size peanut butter Rice Krispy treats with a layer of chocolate on the bottom. I am proud to say that was my breakfast many mornings before school. Ha! I haven’t seen that flavor in stores for years, so naturally when I saw Mix and Match Mama post this recipe for Peanut Butter Rice Krispies, I was excited and intrigued! I knew this would be the next dessert I whipped up.

It all started with this jar of peanut butter last weekend. If I was already going to add peanut butter to my recipe, why not make it an even more delicious peanut butter?! I don’t know about you, but I LOVE peanut butter and salted caramel speaks to me. Have you ever had Starbucks Salted Caramel Hot Chocolate? Go get one, then come back and finish reading this post. 🙂

Ingredients

Note: I followed the Original Rice Krispies Recipe found here.

6 cups Rice Krispies
10 oz marshmallows
3 T butter
1 cup peanut butter of choice

Directions
1. Melt 3 T of butter in a large pot.
2. Add marshmallows and stir until completely melted.
3. Remove from heat and add Rice Krispies. Stir until well coated.
4. Add 1 cup peanut butter. Stir until mixture is smooth.

Note: I recommend adding the peanut butter to the marshmallow mixture and THEN adding the Rice Krispies last. That is what I will do next time I bake these treats!

I was on the phone with my aunt while I was making these treats so I’m just going to go ahead and tell you that yours will look different because a) I never removed the mixture from the heat and b) I added Rice Krispies before I added marshmallows. I WILL tell you that regardless of the mistakes you make while baking, your treats will be absolutely delicious. 🙂

Press your mix into a 9×13 baking pan…or if you are me, press your mix into a large Tupperware container and a smaller square container. My friend recently moved to the area so these treats were her and her roommate’s housewarming gift. I didn’t tell her the mistakes I made in baking and she LOVED them!

And I would like to take a moment of silence for the Salted Caramel Peanut Butter Rice Krispy treats that still exist in my kitchen. I haven’t demolished them and it’s been five whole days. Willpower, I tell ya. 😉

Friends + Fruit + Favorites, Oh My

Like Jamie over at The Celebrating Momma, I believe that you should do a little celebrating every day…not just when Friday rolls around. Although Friday usually does bring some pretty fun times. 🙂 My favorite day of the week is actually Thursday because it’s full of anticipation of good times ahead and everyone is usually still super productive. Even ABC jumped on board with their super amazing TV shows. #TGIT

Anyways, Jamie’s post this week really spoke to me. I was feeling all kinds of anxious and overwhelmed about certain decisions in my life and I kept going back to God asking…what are you doing? Why aren’t things happening? Where are you going with this? Why isn’t it happening MY WAY?

I was sort of asking the right questions. But I wanted to be in the driver’s seat of life, and I am not. I should have been saying…show me what I can do here. Let things happen in your time. Here are my fears…you will make them right. I trust you.

Instead of beating myself up for not trusting the Lord earlier, I’m going to celebrate my favorite moments. 🙂

It could be argued that my favorite food is peanut butter, but is that really even a food? 😉 Come summer, I am all about the fruit. Put pineapple and strawberries in the same container and I am in HEAVEN. The juices mix together and taste so fresh and delicious! Last weekend, my mom and I made these fruit kabobs for me to take to the Kenny Chesney tailgate. Tailgates are also my favorite because they usually include chips and buffalo chicken dip, but I’m that friend that shows up with fruit kabobs and a vegetable tray and turkey burgers. Yes, yes I did.

On the note of Kenny Chesney, these are my favorite people. A big group of us tailgated for a few hours before the concert…eating, drinking, playing corn hole and Kan Jam…there was also laying in the grass (as seen above) and ten people in my Jeep Patriot at one point. Ha! It was HOT and sunny last Saturday but there were scattered torrential downpours. Not scattered showers. It would go from sunny to literally WATCHING the clouds roll in…and then it would pour for a solid ten minutes…and then it would get sunny again. An adventure for sure. 😉

If you follow me on Instagram, you might have seen me geeking out about my succulents the other night. I found these little beauties at Trader Joe’s the other day and I was SO HAPPY because from what I have heard, they are pretty low maintenance…as in, I don’t need to water them 24/7 for them to survive. If this is inaccurate, please don’t burst my bubble. Hahaha

Fresh flowers in my apartment is my favorite, but I don’t like how quickly they wilt and die. Hopefully I have better luck with these plants!

National Running Day. Need I say more? Running is my favorite. If running isn’t your jam, today is National Donut Day. Krispy Kreme and Dunkin Donuts are giving out free donuts. You’re welcome. 🙂

I love checking it out every morning. 🙂 This picture was taken five years ago…I can hardly believe it. My little brothers are both 6’5″ so seeing Jake (my youngest brother) looking this little makes me feel all the feelings! Ha!

I remember this was during the last week of school…you know, those days when you don’t want to go because everything of importance is over?? My mom is a teacher so she went to work but I was allowed to stay home because I was a senior and we LITERALLY had nothing to do except practice for graduation! Somehow, the baby of the family convinced my mom he should also be allowed to skip school. I guarantee when I was eleven years old this never would have happened. #babychildproblems But since I was essentially “babysitting” and my friend and I wanted to make plans, we took this cutie to the Pittsburgh Zoo. Our other brother was hanging out with his friends on this day…but we had so much fun at the zoo and we took so many pictures! I hope my brothers both love hanging out with me as much as I love hanging out with them. 🙂

Last weekend, my dad, my brother, and I went to brunch at Eat ‘N Park. It’s definitely one of my favorite restaurants! I love their omelettes, their salad bar, and of course, their Smiley cookies. I guess you could call this a chain restaurant because there are several locations…but it’s kind of a Pittsburgh thing! Randi will know what I’m talking about. 😉

When you’re a kid, this restaurant is the best because you get a FREE Smiley cookie after you’re done eating. Me and my brother Alex definitely tried to pretend Jake was a “kid” for a lot longer than he actually was so we could get free cookies! Recently, I bought a Smiley mug (in Pittsburgh colors, of course) so I can represent my favorite place while I’m at school…but last weekend, I discovered Eat ‘N Park now makes K cups and my day was made. I might have to go back and stock up! I don’t usually like black coffee, but this is so good with just a little bit of Splenda!

One of the first Pinterest snacks that I pinned many moons ago was a such a success that now my mom and I have the recipe memorized. Energy balls are my favorite. Energy balls that aren’t rolled into balls yet are just plain dangerous.

Summer gives me a lot of time to shop. This is not a positive. One positive thing is my tank top from Target was on clearance…so that makes it all okay, right?! Jake is super into brand name clothing. I like nice clothes. I don’t really care where they’re from as long as they’re pretty and they make me look good. Ha! Anyways, when I was in Atlantic City recently, I went to the True Religion store to browse around for him. While my mom and I were sending him pictures of clothes in the store (yes, we were those people), the sales woman was accosting me because all the shorts and pants were $50 off for Memorial Day.

Well. True Religion clothing is expensive and even at $50 off, I am not spending that much on shorts. It’s just not enough fabric to be worth it. Ha! So this woman convinced me that I needed to try on these jeans and really all I wanted to was go shop at the boutique next door. But I tried the beloved jeans on, and as Sheaffer would say, “they’re like buttah.” My new favorite.

Balance

In one word, my weekend could be described as relaxing. Friday after work, I stayed at school to work on some projects because I am feeling totally overwhelmed by end of the semester projects.

Last semester, everything seemed to be planned out better…now I feel like everything is all crammed into the last month of school! I am a big fan of getting all my work done during the week so that I can relax on the weekend. That is my idea of keeping the balance! But I spent most of Sunday doing work. Such is life.

I went for a run to clear my head before my roommate made dinner and it felt like the longest run of my life. Ha! Some days are like that. I was also cranky because it was really hot. I think I forget what the sun feels like;) It was just so humid! I stopped halfway through and felt kind of lame so I found a set of stairs and did step ups, push ups, squats, and tricep dips. And then I found the UMD President’s house. I may or may not have taken a photo. You can decide. 😉

I was on a mission to find new sandals this weekend mostly because a lot of my summer shoes are in Pittsburgh and partly because I just like to shop. 😉 I was so surprised that the sandals were picked over in almost EVERY store I went into! And I went into 5! But I also have a really big foot so my shoe shopping process is a little different. First, I have to see if they have my size, then I am allowed to look and see if the shoe is cute. Ha! Finally, I ended up at Marshall’s and while perusing the clearance rack (which was in no sort of order #annoying), I found a pair of sandals that I actually wanted in my size AND on sale!

I had a lot of fun getting dressed this weekend. I love the change in seasons because it feels like you have a whole new wardrobe! When fall comes, I love pulling out my scarves and boots, but now I am just as excited about warm weather clothes. Although I feel like I don’t remember how to dress for warm weather. I am either too hot or too cold!

On Saturday night, I went to a bonfire at my friend Dani’s house. She lives with a bunch of roommates and they all invited friends over for a cookout! I love food on the grill and hanging out with friends. 🙂 She is leaving DC soon so it was a fun final get together with her!

We had burgers, grilled pineapple, way too many chips, cookies, and lots of fun drinks! It felt so good to sit outside and just hang out. I love the feeling of walking outdoors and not being hit in the face with a blast of cold air!

I had fun getting dressed again yesterday before church;) Now you can kinda see my new sandals! They are cognac and black and snakeskin and I LOVE THEM! I am also loving the series that we are talking about at church right now called “One Little Yes”…the thing that has been on my mind most is that you can’t finish what you don’t start…and God can’t finish what you don’t start either! So just say YES!

My friends and I always want to go to brunch after church and we are always reminded that the wait at all the nearby restaurants/cafes is an hour or more. Instead, we walked over to Eastern Market, which is an arts and food market that sells a lot of great items! But they also make breakfast and lunch. 🙂 I got chocolate chip pancakes and scrambled eggs…you know I had a good breakfast because after I left, I went to put my hair up and I felt syrup in my hair. So there’s that.

I was SO JAZZED (yes I said jazzed) for the Lilly Pulitzer release at Target yesterday and I was browsing online when I woke up. Some of the items were in store only and some of the items were online only, so I just figured I would go into the store later that day. According to social media, it was a little like Black Friday madness with lines out the door and people waiting all night…when I got to Target at 1 PM, this sign was the only evidence of Lilly ever existing in the store! Target’s CEO released a statement saying when items are sold out they are gone…so now everything is on eBay. OH WELL!

To make up for my lack of Lilly…the above was purchased. It’s coconut pineapple flavor and I was so excited about it! Liked it, but didn’t love it. Notice the past tense. Ate it all already. 🙂

What I’ve Been Eating Wednesday: Recipe Club Edition

Recipe Club 2

On Wednesdays, I usually share what I’ve been eating recently…but I’ve been a huge slacker in the picture department so I’m linking up with Andrea to share an oldie but goodie…no bake energy balls!

When it comes to cooking, I have two major beliefs. Number one: everyone knows how to cook. If you know how to follow directions (aka a recipe), then you are a chef to me! Number two: it must be easy and it must not include 9,472 ingredients that no one has in their pantry. Do you hear me, Pinterest? I don’t have the grocery store’s entire spice section in my kitchen! I will admit to frequently omitting ingredients…especially when only a teaspoon is called for. This may not be the best method, but it’s part of my method…which is that cooking and baking should be simple. Fewer ingredients is better and easy assembly is where it’s at!

…because you throw things in a frying pan and let it go. And it still looks pretty and tastes delicious no matter what!

Pinterest goes through phases where I swear I see similar recipes pinned over and over again and then they seem to fade away. A few years ago, I found a recipe for energy balls and I’m pretty sure that my mom and I have made these at least twice a month ever since! In our family, this Pinterest trend stuck around. 😉

This little snack tastes like a mini chocolate chip cookie with a little extra sweetness because of the coconut. It’s right up my alley because you mix everything in a bowl, roll it up, and put them in the fridge. I mean, come on. What could be easier?!

Here is what you need:

1 cup oatmeal
½ cup peanut butter (or other nut butter)
⅓ cup honey
1 cup coconut flakes
½ cup ground flaxseed
½ cup mini chocolate chips
1 tsp vanilla

Once you have combined all the ingredients, use a spoon to “measure” a little bit of “batter” and roll it into a ball. Put the rolled energy balls on a cookie sheet or in a container and store them in the fridge. 🙂

You can call me out on the ground flaxseed. I know it’s not an ingredient that everyone has on hand and I honestly never purchased it until we made this, but now there’s always a bag with our baking ingredients!

Our first successful batch!

We made these before going on our annual girls’ trip to Atlantic City and they were the perfect snack for the car and for the beach! Plus, it always helps to know that you’re eating something healthy on vacation. At first, my mom pinned this recipe, too…then she grew to love it so much that she wrote it on a little index card and put it in the cabinet with all our baking ingredients. Now I’m pretty sure she could make it with her eyes shut, but I don’t want to call her out. 😉 I’ll just say that’s a testimony to how good they are!

Sidenote: I recently tried a vanilla energy ball recipe recommended by The Beachbody Blog. It’s also a simple recipe, but it calls for almond flour…which I don’t keep on hand in my kitchen. So in true Kylie fashion, I skipped it. Let’s just say the end product wasn’t as good as it could have been. 😉

Road Trip Essentials

Finally going home for Spring Break! 🙂

The drive from Pittsburgh to D.C. or vice versa is ridiculously easy and because it’s ridiculously easy, it’s also ridiculously boring. Or maybe I just think that because I’ve done it 107 times;) That is a slight exaggeration, but I spent a lot of weekends this fall in my car and so I’ve been staying put for longer periods of time these days. The trip is only about four hours, but the mountains of Maryland and Pennsylvania can only be so interesting before you start to lose it! Luckily, about two hours into the trip, I am able to stop in Breezewood, PA where I usually get coffee or food, fill up my gas tank, play with my phone, and then get back to driving. Traffic going home is never bad but traffic coming back is horrendous. As it usually is in this area. Once you are about 30 minutes away from my apartment you hit the bumper-to-bumper loveliness. At all hours of the day. Believe me, I have tried to arrive at many different times.

Since I drive by myself, I have to try to keep myself entertained and alert. When you’re traveling with friends, driving is obviously much more fun! At any rate, here are my road trip rituals for the drive to and from school.

1. Beverages.

You might think I am crazy for listing drinks first…but listen, I drink a ton of water, and running out of water while I’m on the road is no fun. Most of my water bottles are 32 ounces (because I’m a freak like that) and I try to drink one water bottle during each half of the trip. This way, I know that I’m hydrated, and it makes me stop and take a break half way through the trip because I have to go to the bathroom. Reasons why I have three water bottles instead of one that I refill: the water fountain at the place that I stop tastes disgusting. I actually bought a water bottle there once because I couldn’t stand the taste of the water fountain. #watersnob Also…caffeine is necessary for all road trips, especially solo road trips. 😉

2. Comfy clothes.

I usually leave early in the morning (around 7 AM) so I can get to wherever I’m going in a decent amount of time and still have most of the day to get things done or make plans with family and friends. I’m a morning workout person, but if I’m getting up to drive, I just get dressed in my workout clothes. Then I am comfy while I drive and I am ready to workout whenever I get to my destination. 🙂

I also do not recommend white comfy clothes. I only made this mistake once, but as you can see, it was fatal. Hahaha
I made chocolate Shakeology before I left Maryland and before I started drinking it a few hours later, I just shook the cup again to get the drink moving. When I popped the lid open, it showed me who was boss.

3. Easy breakfast/snacks

You can’t go wrong with overnight oats when you know you are going to be running out the door! Here, the almond butter jar was basically empty, so I added almond milk, oats, and cinnamon and let it sit in the fridge overnight. When I woke up, I grabbed the whole container and a banana and had a perfect breakfast ready to take with me!

Shakeology is also perfect for breakfast. Easy to make and it tastes good! On a regular day, I like to drink it a little thicker so it’s like ice cream;) But on the road, it’s often my breakfast! As far as snacks go, I need something that I will eat and it will be gone. No grapes or popcorn or carrot sticks or anything that there is a bunch of because I will in fact eat it all mindlessly while I drive. Granted, most people don’t have entire bags of grapes or carrot sticks on their passenger seat, but when leftover groceries travel with me, I have learned to put them far away from where I can reach them. #somuchselfcontrol

You know my love of peanut butter and jelly knows no bounds. I love Lara Bars because they are made with a handful of ingredients (REAL FOOD!) so this flavor is a nice healthy replacement for my PB&J obsession. 🙂

4. A full gas tank.

This should probably be a little higher up on my list but I loathe the gas station. If someone else (like my Dad or brothers) is in the car with me when I get to the gas station, you can bet your fine self I am not getting out of the car. #diva I can make it all the way home on one tank of gas, but one time I decided to leave without a full tank (hey, it was 1/2 full…) and then I didn’t get gas halfway through my trip. Stupid, stupid, stupid. My gas light came on right as I passed a sign announcing the next rest stop was closed due to construction. This was the same night my Shakeology exploded. Great times! Needless to say, I am a freak about filling up my gas tank now. I even get gas halfway just in case. Two times at the gas station in the same day. Go me.

5. New-to-me entertainment.

If I’m in the middle of listening to a podcast, I make sure to download the latest episode before I leave (using wifi instead of data and all that responsible cell phone stuff). 😉 I also LOVE to add new music to my library or add old playlists to my library just to mix it up. I listen to my music LOUD for the beginning and the end of my trip…it’s my “yay, I’m leaving!” or “yay, I’m almost there!” celebration. But somewhere in the middle, the music starts to annoy me and I find myself hitting next after the first ten seconds of every song. That’s when my podcasts save my life. I’m toying around with the idea of listening to books on tape, but then I think of my 52 book challenge for the year and feel like audio books are cheating! I’m still deciding. For my drive today, I added some T-Pain, John Newman, and Nicki Minaj music to my playlists. Some songs are new, some songs are just new to me, and some are throwbacks.
